Ingredients
1 c. butter
1 c. sugar
3 eggs
c. heavy cream
3/4 c. roasted walnuts or any nuts
1 1/2 c. cake flour
2 tbsp. fine cocoa powder
2 tsp. baking powder
1/2 c. chocolate chips
Preparation
Step 1Preheat the oven to 375 degrees.Step 2Place the butter and sugar in the bowl of an electric mixer, and mix at medium speed for 2 minutes until uniform.Step 3Add the eggs, cream, nuts, flour, cocoa powder, and baking powder, and reduce the mixing speed to low. Mix until uniform.Step 4Turn off the mixer, add the chocolate chips, and mix well.Step 5Place cupcake liner in each cup of a 6-cup muffin pan. Spoon in the batter so each cup is 3⁄4 full.Step 6Bake for 20 minutes.Step 7Remove the muffins from the oven and set aside to cool.Step 8Remove the muffins from the pan and serve immediately, or store in an airtight container for up to 2 days.
