Ingredients
2 cups semisweet chocolate chips1-1/2 cups heavy whipping cream, divided1/4 cup confectioners’ sugar1 tablespoon vanilla extract1 chocolate crumb crust (9 inches)Whipped cream and chocolate curls, optional
Preparation
In a large microwave-safe bowl, combine chocolate chips and 1/2 cup of cream. Cook on high until smooth, 1-2 minutes, stirring every 30 seconds. Stir in sugar and vanilla. Cool to room temperature.
In a large bowl, beat remaining 1 cup cream until soft peaks form. Gently fold into chocolate mixture, one third at a time. Spoon into crust. Refrigerate at least 3 hours before serving. If desired, garnish with whipped cream and chocolate curls.
