Ingredients

1/2 cup butter, softened1 cup sugar2 large eggs1 teaspoon vanilla extract1-1/2 cups all-purpose flour3 tablespoons baking cocoa1/2 teaspoon salt1/2 teaspoon baking soda1/2 teaspoon ground cinnamon1 cup grated unpeeled zucchini1/2 cup semisweet chocolate chips

Preparation

In a large bowl, cream the butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, cocoa, salt, baking soda and cinnamon; gradually add to creamed mixture just until moistened. Fold in zucchini and chocolate chips.

Spoon into a greased 8x4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
