4 cups chopped romaine1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained2 celery ribs, sliced1 medium tomato, chopped1/3 cup sliced Greek olives1/3 cup crumbled feta cheese1/4 cup finely chopped pepperonciniDRESSING:2 tablespoons minced fresh basil2 tablespoons pepperoncini juice2 tablespoons extra virgin olive oil1 tablespoon lemon juice1/4 teaspoon salt1/4 teaspoon pepper
Preparation
Place first 7 ingredients in a large bowl. In a small bowl, whisk together dressing ingredients. Drizzle over salad; toss to combine. Serve immediately.
