Ingredients
1 1/2 c. black beans (1 15-oz. can, drained and rinsed very well)
1/2 c. quick oats
1/2 tsp. baking powder
2 tbsp. cacao powder
1/4 tsp. kosher salt
1/2 c. pure maple syrup
1/4 c. coconut oil
2 tsp. pure vanilla extract
1/3 c. chocolate chips, plus more for topping
Preparation
Step 1Preheat oven to 350°. Step 2Combine all ingredients except chocolate chips in a good food processor and blend completely until smooth. Really blend well. (A blender can work if you absolutely must, but the texture — and taste — will be much better in a food processor.)Step 3Stir in the chips, then pour into a well-greased 8"-x-8" pan. Optional: Sprinkle extra chocolate chips on top.Step 4Cook brownies 15 to 18 minutes. Let cool at least 10 minutes before slicing them into squares. If they still look a bit undercooked, place them in the fridge for an hour — or overnight — and they will firm up.
