Ingredients
1-1/2 pounds salmon fillets1/4 cup lime juice, divided1/2 cup minced fresh cilantro3 tablespoons thinly sliced green onions1 tablespoon finely chopped jalapeno pepper1 tablespoon olive oil1/4 teaspoon salt1/8 teaspoon pepperOptional: lime wedge, sliced jalapeno and cilantro sprigs
Preparation
Preheat oven to 350°. Place salmon skin side down in a 13x9-in. baking dish coated with cooking spray. Drizzle with 1-1/2 teaspoons lime juice.
In a small bowl, combine the cilantro, onions, jalapeno, oil, salt, pepper and remaining lime juice. Spread over salmon. Bake, uncovered, until fish just begins to flakes easily with a fork, 20-25 minutes. If desired, serve with lime wedges, sliced jalapeno and cilantro sprigs.
