Ingredients
1/2 c. (2 sticks) butter, plus more for pan
1 (12-oz.) bags marshmallows
1 tsp. cinnamon, plus more for dusting
1/4 tsp. kosher salt
5 c. Rice Krispies
1 oz. cream cheese, softened to room temperature
1/4 c. powdered sugar
1/4 tsp. pure vanilla extract
1/2 tsp. heavy cream, optional
Preparation
Step 1Make Rice Krispies treats: Grease an 8x8-inch baking pan with butter. In a large pot over medium heat, melt remaining ½ cup butter. Add marshmallows and stir until completely melted. Stir in cinnamon and salt, then remove from heat and stir in Rice Krispies using a wooden spoon.Step 2Pour mixture into pan and gently smooth top with spatula. Let cool for 25 minutes, then cut into 12 squares. Use your hands to round the edges and shape into round discs—like cinnamon rolls. (If the mixture is sticking to your hands, try wetting your palms with water before shaping.) Let cool completely.Step 3Meanwhile, make glaze: In a medium bowl using a whisk, beat cream cheese until smooth. Add powdered sugar and vanilla and beat until smooth. If icing is too thick, add heavy cream ½ teaspoon at a time until it reaches desired consistency. Transfer to a piping bag (or resealable plastic bag).Step 4Cut off tip of the piping bag and pipe swirls of frosting onto each Rice Krispies treat. Dust with cinnamon before serving.
