Ingredients

1 tbsp. butter, melted

1 1/2 tbsp. granulated sugar

1/2 tsp. ground cinnamon

1 large sweet potato, thinly sliced about 1/8"-thick

Step 1Preheat oven to 350°. Brush a large rimmed baking sheet with a thin layer of butter. In a small bowl, mix sugar and cinnamon until well combined.Step 2Place sweet potatoes in a single layer. Brush tops of sweet potatoes with remaining butter, then sprinkle on a thin layer of cinnamon sugar.Step 3Bake until edges of some chips are deeply golden and crispy, and sugar has melted into a glassy finish, 12 to 15 minutes. For thicker chips, return to oven for 5 more minutes to achieve proper crispiness.Step 4If desired, immediately toss with remaining cinnamon sugar for a sweeter chip. Let chips cool for 5 minutes before serving.

For best results, keep a close eye on your chips after the 10 minute mark—depending on how uniformly you sliced your spuds, some may turn golden (or even burn) before others! Pull them off as they are done and leave the thicker-cut ones on the tray to bake for a while longer for crunchy perfection.
