Ingredients
1 cup plus 2 tablespoons all-purpose flour3/4 cup dried minced onion4 to 6 tablespoons chili powder1/4 cup paprika2 tablespoons salt1 tablespoon ground cumin1 tablespoon dried minced garlic1 tablespoon sugarADDITIONAL INGREDIENTS (for each batch):1 pound ground beef1 can (15 ounces) pinto beans, rinsed and drained1 can (14-1/2 ounces) diced tomatoes, undrained1 small green pepper, chopped1/2 to 3/4 cup waterSour cream, optional
Preparation
Combine the first eight ingredients; divide into six batches (a scant 1/2 cup each). Store in airtight containers. Yield: 6 batches.
To prepare chili: In a large saucepan, cook beef over medium heat until no longer pink; drain. Stir in one batch of chili mix, beans, tomatoes, green pepper and water; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Garnish with sour cream if desired.
