Ingredients

10 to 12 mint leaves, plus more for garnish

2 oz. light rum

1 oz. lime juice

1/2 oz. simple syrup 

Soda water

Step 1Add mint, rum, lime juice, and simple syrup to a Collins glass. Gently muddle the mint leaves for 15 to 20 seconds; do not break the leaves.Step 2Fill the glass with ice and top off with soda. Stir the drink slightly, garnish with a sprig of mint and serve.

The key to a good mojito is in the muddling. A muddler is a simple tool that’s most commonly made of wood but can also be crafted out of metal or plastic. It’s used to press ingredients like citrus or herbs into the bottom of a glass in order to unlock their hidden, powerful essences. If you don’t have a muddler, that’s okay. You can use a wooden spoon or any other kitchen tool that could be used to mash and grind in a glass. For a mojito, you want to muddle mint just enough so that the leaves emit their natural oils, but not too much that they bruise or break into pieces.
