Ingredients

12 tbsp. unsalted butter

1 1/4 c. all-purpose flour

1 c. rye flour

1/4 c. coconut flour

1 c. sugar

c. finely shredded unsweetened coconut

1 tbsp. baking powder

1 1/2 tsp. kosher salt

1 can light coconut milk

4 egg whites

3/4 c. finely shredded unsweetened coconut

3 tbsp. sugar

3 egg whites

Preparation

Step 1Preheat oven to 350 degrees F and place a rack in the center. Butter and flour a 12-muffin tin. In a large bowl, stir together flours, sugar, coconut, baking powder, and salt. In a medium bowl, whisk together melted butter, coconut milk, and egg whites. Gently fold butter mixture into flour mixture.Step 2To make topping: In a small bowl, mix together topping ingredients; set aside.Step 3Spoon batter into muffin cups and scoop about 1 tablespoon reserved topping on each muffin.
