Ingredients

1 package yellow cake mix (regular size)1 package (3.4 ounces) instant vanilla pudding mix1 cup water1/2 cup canola oil3 large eggs1/2 teaspoon coconut extract1/2 cup sweetened shredded coconut2 tablespoons poppy seedsConfectioners’ sugar

Preparation

In a large bowl, combine the cake mix, dry pudding mix, water, oil, eggs and extract; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in the coconut and poppy seeds.

Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 48-52 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners’ sugar.
