Ingredients
10 cherry tomatoes, halved2 celery ribs, thinly sliced1 medium green pepper, sliced1 medium sweet red pepper, sliced1 medium red onion, sliced and separated into rings1 cup sliced fresh mushrooms1 tablespoon red wine vinegar1 tablespoon olive oil1 teaspoon lemon juice1 garlic clove, minced1 teaspoon dried basil1/2 teaspoon salt1/2 teaspoon pepper
Preparation
Divide the vegetables between two pieces of heavy-duty foil (about 18 in. square). In a small bowl, combine the remaining ingredients; drizzle over vegetables. Fold foil around vegetables and seal tightly. Grill, covered, over medium heat for 10-15 minutes or until the vegetables are crisp-tender.
