Ingredients

3 tablespoons cranberry juice3 tablespoons olive oil1 tablespoon lemon juice1 tablespoon honey2 green onions, finely chopped2 garlic cloves, minced1 teaspoon dried oregano1/4 teaspoon salt1/8 teaspoon pepperSALAD:1 medium head iceberg lettuce, shredded2 medium carrots, shredded2 celery ribs, chopped2 green onions, thinly sliced2 medium tomatoes, seeded and diced1 small cucumber, sliced

Preparation

In a small bowl, whisk the first nine ingredients. Refrigerate for at least 1 hour.

In a large salad bowl, combine the lettuce, carrots, celery, onions, tomatoes and cucumber. Just before serving, whisk dressing and pour over salad; toss to coat.
