Ingredients

4 cups cubed peeled potatoes3 hard-boiled large eggs, chopped2 celery ribs, thinly sliced1/4 cup chopped green onions1/2 cup sour cream1/2 cup mayonnaise2 tablespoons vinegar2 tablespoons sugar1 teaspoon prepared mustard1/2 teaspoon salt1/4 teaspoon pepper

Preparation

Place potatoes in a saucepan and cover with water; bring to a boil. Reduce heat. Cook until tender, 20-25 minutes; drain. Place in a large bowl; add eggs, celery and onions.

In a small bowl, combine the remaining ingredients; stir into potato mixture. Cover and refrigerate at least 1 hour before serving. If desired, garnish with additional green onions and black pepper.
