Ingredients

1/2 stick butter, softened

1/3 c. brown sugar

8 oz. cream cheese, softened

1 tsp. vanilla extract

pinch of kosher salt

1/2 c. powdered sugar

1/2 c. mini chocolate chips

1 pt. vanilla ice cream softened

8 sugar ice cream cones

1 c. chocolate chips

2 tbsp. coconut oil

Rainbow sprinkles, for serving

Preparation

Step 1In a medium bowl, combine butter, brown sugar, powdered sugar, cream cheese, vanilla, salt and chocolate chips. Stir until the mixture is smooth. Scoop about 1/4 c. rounds of dough. Freeze for 1/2 hour, or until the cookie dough is firm.Step 2Meanwhile, fill ice cream cones with softened ice cream and level off the top of the cone with a butter knife or spatula. Freeze for 1/2 hour, or until the ice cream is firm.Step 3Make magic shell. Set up a double boiler: Bring a saucepan of water to a simmer. Add a glass bowl and add chocolate. Stir until melted, then stir in coconut oil. Remove from heat and let cool to room temperature.Step 4To assemble drumsticks, top cones with cookie dough round, pour magic shell over cookie dough and garnish with sprinkles. Serve immediately.
