Ingredients

1/2 cup olive oil1/4 cup red wine vinegar1 tablespoon sugar1 garlic clove, minced1 teaspoon salt1 teaspoon ground cumin1 teaspoon chili powder1/4 teaspoon pepper3 cups cooked basmati rice1 can (16 ounces) kidney beans, rinsed and drained1 can (15 ounces) black beans, rinsed and drained1-1/2 cups frozen corn, thawed4 green onions, sliced1 small sweet red pepper, chopped1/4 cup minced fresh cilantro

Preparation

In a large bowl, whisk the first 8 ingredients. Add the remaining ingredients; toss to coat. Chill until serving.
