Ingredients

1 c. (2 sticks) butter, softened

1 c. packed brown sugar

1/2 c. granulated sugar

1 1/2 tsp. pure vanilla extract

2 large eggs, room temperature

2 1/2 c. all-purpose flour

1 1/2 tsp. baking soda

1 tsp. kosher salt

1/4 tsp. ground cinnamon

1/3 c. quick-cooking oats

2 1/2 c. semisweet chocolate chips

3/4 c. chopped walnuts

Preparation

Step 1Preheat oven to 350°. Line two baking sheets with parchment. In a large mixing bowl using a hand mixer, cream butter, sugars, and vanilla until light and fluffy, about 5 minutes. Slowly mix in eggs, beating until mixture is smooth.Step 2In a separate bowl, combine flour, baking soda, salt, and cinnamon. Gradually stir dries into the butter-sugar mixture, then fold in oats, chocolate chips, and walnuts.Step 3Use a large cookie scoop to place balls of dough about 2" apart on prepared baking sheets. Bake until edges are lightly golden but center of cookie is still a bit soft, 17 to 19 minutes.
