Ingredients

1 (8.5-oz.) box cornbread mix

3/4 c. milk

1 egg

3 tbsp. granulated sugar 

2 tbsp. melted butter

1 tsp. pure vanilla extract

Preparation

Step 1Preheat waffle iron. In a large bowl combine cornbread mix, milk, egg, sugar, butter, and vanilla. Mix well, but do not over-mix. (A few lumps are okay.) Let batter sit until slightly thickened, 5 minutes.Step 2Lightly grease waffle iron with cooking spray. Pour about 1/2-cup of batter into waffle iron, and cook according to waffle iron’s specifications. Step 3Serve with ice cream and fresh fruit.

Delish note: While some recipes call for straight cornbread mix (as you’d make it for cornbread), you really do need a little extra fat to ensure that the mix spreads nicely in the waffle iron. This recipe also makes insane cornbread pancakes, too.
