Ingredients

1 cup all-purpose flour1 cup yellow cornmeal1/4 cup sugar2 teaspoons baking powder3/4 teaspoon salt1 cup 2% milk2 large eggs, lightly beaten, room temperature1/4 cup canola oil

Preparation

Preheat oven to 400°. In a large bowl, combine flour, cornmeal, sugar, baking powder and salt. Stir in milk, eggs and oil just until moistened.

Spoon into a greased 8-in. square baking pan. Bake until a toothpick inserted in the center comes out clean, 20-25 minutes.
