Ingredients

1 large egg, lightly beaten2 tablespoons lemon juice1/2 cup all-purpose flour1/4 cup yellow cornmeal1 teaspoon Cajun seasoning1/2 teaspoon garlic powder1/2 teaspoon salt4 catfish fillets (6 ounces each)3 tablespoons canola oil

Preparation

In a shallow bowl, combine the egg and lemon juice. In another shallow bowl, combine the flour, cornmeal, Cajun seasoning, garlic powder and salt. Dip catfish into egg mixture, then coat with cornmeal mixture.

In a large skillet, heat oil over medium heat. Fry fish, 2 at a time, just until fillets begin to flake easily with a fork, 5-6 minutes on each side.
