Ingredients
4 medium pears, peeled and cut into 1-inch cubes1/2 cup dried cranberries2 tablespoons lemon juice1/4 cup sugar1 tablespoon all-purpose flour2 teaspoons grated lemon zest1 teaspoon ground cinnamon1/2 teaspoon ground nutmegTOPPING:1/3 cup all-purpose flour1/3 cup old-fashioned oats1/3 cup packed brown sugar1/4 cup ground flaxseed1/4 teaspoon salt2 tablespoons butter, melted2 tablespoons canola oil
Preparation
In a large bowl, combine pears and cranberries; drizzle with lemon juice. Combine the sugar, flour, lemon zest, cinnamon and nutmeg; stir into pear mixture. Transfer to an 8-in. square baking dish coated with cooking spray.
For topping, in a small bowl, combine the flour, oats, brown sugar, flax and salt. Stir in butter and oil until crumbly. Sprinkle over fruit mixture. Bake at 350° until topping is golden brown and fruit is tender, 35-40 minutes.
