Ingredients
2 cups quick-cooking oats1/2 cup whole wheat flour2 ounces semisweet chocolate, grated3/4 teaspoon baking soda1/2 teaspoon ground cinnamon1/4 teaspoon salt1/4 teaspoon ground nutmeg2 eggs1 egg whiteSugar substitute equivalent to 1/2 cup sugar1/2 cup unsweetened applesauce1/4 cup canola oil2 teaspoons vanilla extract3/4 cup dried cranberries
Preparation
In a large bowl, combine the first seven ingredients. Whisk the eggs, egg whites, sugar substitute, applesauce, oil and vanilla; stir into dry ingredients just until moistened. Stir in dried cranberries.
Spread into a 9-in. square baking pan coated with cooking spray. Bake at 350° for 17-20 minutes or until set. Cool on a wire rack.
