Ingredients
2 large eggs, lightly beaten1/3 cup soft bread crumbs1/4 cup finely chopped onion1/4 cup finely chopped celery1/4 cup ground walnuts1/4 cup minced fresh parsley1 teaspoon salt1 pound lean ground chickenSAUCE:1 cup whole-berry cranberry sauce1 cup maple syrup3 tablespoons Dijon mustard1/2 teaspoon salt1/2 teaspoon grated orange zestMinced fresh parsley, optional
Preparation
Preheat oven to 400°. In a large bowl, combine the first seven ingredients. Add chicken; mix lightly but thoroughly (mixture will be soft). Shape into 1-1/2-in. balls.
Place meatballs on a greased rack in a shallow baking pan. Bake 15-20 minutes or until cooked through.
For sauce, in a large saucepan, combine the first five sauce ingredients; bring just to a boil, stirring occasionally. Gently stir in meatballs. If desired, sprinkle with parsley just before serving.
