Ingredients

2 cups all-purpose flour1 cup sugar1-1/2 teaspoons baking powder1 teaspoon salt1/2 teaspoon baking soda1/4 cup butter, cubed1 large egg, room temperature3/4 cup orange juice1 tablespoon grated orange zest1-1/2 cups fresh or frozen cranberries1/2 cup chopped walnuts

Preparation

Preheat oven to 350°. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk the egg, orange juice and zest; stir into dry ingredients just until moistened. Fold in cranberries and walnuts.

Spoon batter into a greased and floured 8x4-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 65-70 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely.
