Ingredients

1 cup mashed sweet potato2 tablespoons sugar2 tablespoons dried cranberries2 tablespoons butter, melted2 tablespoons beaten egg1/4 teaspoon vanilla extractTOPPING:1/4 cup chopped pecans1/4 cup packed brown sugar2 tablespoons all-purpose flour2 tablespoons cold butter

Preparation

In a small bowl, combine the sweet potato, sugar, cranberries, butter, egg and vanilla. Transfer to a greased shallow 2-cup baking dish.

Combine the pecans, brown sugar and flour. Cut in butter until crumbly. Sprinkle over top.

Bake, uncovered, at 350° for 20-25 minutes or until a thermometer reads 160°.
