Ingredients

1/2 cup sugar1/2 cup water2 tablespoons plus 1 teaspoon canola oil1-1/2 teaspoons white vinegar1/2 teaspoon vanilla extract3/4 cup all-purpose flour4-1/2 teaspoons baking cocoa1/2 teaspoon baking soda1/4 teaspoon saltConfectioners’ sugar, optional

Preparation

Preheat oven to 350°. Grease a 8-1/2x4-1/2-in. loaf pan. In a small bowl, beat the sugar, water, oil, vinegar and vanilla until well blended. Combine flour, cocoa, baking soda and salt; gradually beat into sugar mixture until blended.

Pour into prepared pan. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes.

Cool 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners’ sugar if desired.
