Ingredients
1 tbsp. butter
2 tsp. flour
1 1/2 c. heavy whipping cream
4 ear corn
1 jalapeño or other chile pepper (optional)
Juice from 1/2 lemon
1 tsp. salt
Black pepper
Preparation
Step 1Combine butter and flour in a saucepan, and whisk together over medium heat. Stir for one minute. Add heavy cream and whisk some more. Leave simmering over medium heat for about 10 minutes, continuing to stir occasionally so the cream does not stick and burn to the bottom of the pot.Step 2Shuck fresh corn and slice kernels lengthwise, chopping the tops of the kernels off, and leaving the bottom attached to the cob. With the back of your knife, scrape the remaining corn from the cob, and combine with the kernel tops.
