Ingredients
1 tbsp. extra-virgin olive oil
4 slices bacon, cooked and chopped, 1 tbsp. fat reserved
1 yellow onion, chopped
2 jalapeños, finely chopped, plus more sliced for serving
2 garlic cloves, minced
2 tbsp. adobo seasoning
1 tbsp. ground cumin
2 cans Good & Gather Sweet Whole Kernel Corn, drained and rinsed
1/3 c. chopped fresh cilantro
6 oz. cream cheese, softened and cut into cubes
1/2 c. sour cream
1/2 c. Mexican shredded cheese blend
Sliced scallions and tortilla chips, for serving
Preparation
Step 1In a 10" skillet over medium-high heat, heat oil and reserved bacon fat. Cook onion, chopped jalapeños, and garlic, stirring, until lightly golden and softened, about 5 minutes. Step 2Stir in adobo seasoning and cumin, then add Good & Gather Sweet Corn Kernels and cilantro and cook, stirring occasionally, until corn is bright yellow and heated through, 5 to 6 minutes more. Step 3Stir in cream cheese and sour cream until combined. Remove from heat and stir in cheese. Step 4Top with chopped bacon, scallions, and jalapeño slices. Serve with chips alongside.
