Ingredients

2-1/2 cups chicken broth2 ounces cream cheese, cubed1/2 teaspoon grated lemon zest1 tablespoon lemon juice1/4 teaspoon salt1/4 teaspoon coarsely ground pepper1 cup uncooked long grain rice1/4 cup minced fresh basil

Preparation

In a saucepan, combine first six ingredients; bring to a boil. Stir with a whisk to blend.

Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, about 15 minutes. Stir in basil.
