Ingredients

1 egg1/2 cup milk3/4 cup crushed saltines (about 25 crackers)2/3 cup all-purpose flour3/4 teaspoon salt1/4 teaspoon baking powder1/4 teaspoon cayenne pepper1/4 teaspoon pepper4 beef cube steaks (4 ounces each)3 tablespoons canola oilGRAVY:2 tablespoons all-purpose flour1-1/3 cups milk1/4 teaspoon salt1/4 teaspoon pepper

Preparation

In a shallow bowl, whisk egg and milk. In another shallow bowl, combine the cracker crumbs, flour, salt, baking powder, cayenne and pepper. Dip steaks in egg mixture, then in crumb mixture.

In a large skillet, cook steaks in oil over medium heat for 3-4 minutes on each side or until no longer pink. Remove and keep warm.

For gravy, stir flour into the pan until blended. Gradually add milk, stirring to loosen browned bits from pan. Bring to a boil; cook and stir 2 minutes or until thickened. Season with salt and pepper. Serve with steaks.
