Ingredients

2 packages (16 ounces each) coleslaw mix2 medium Honeycrisp apples, julienned1 large carrot, shredded3/4 cup chopped red onion1/2 cup chopped green pepper1/2 cup cider vinegar1/3 cup canola oil1-1/2 teaspoons sugar1/2 teaspoon celery seed1/2 teaspoon salt1/2 cup coarsely chopped dry-roasted peanuts or cashews

Preparation

In a large bowl, combine the first 5 ingredients. In a small bowl, whisk the vinegar, oil, sugar, celery seed and salt.

Just before serving, pour dressing over salad; toss to coat. Sprinkle with peanuts.
