Ingredients
1 lb. ground beef (80% lean)
Kosher salt
Freshly ground black pepper
4 Portuguese or kaiser buns
1 tbsp. French’s Classic Yellow Mustard, plus more for serving
8 slices thinly sliced Swiss cheese
12 slices thinly sliced smoked ham
3/4 c. sliced dill pickles
1/2 small red onion, very thinly sliced
Preparation
Step 1Divide the ground beef into four 4-ounce burgers and form into ½-inch thick rounds. Season all over with ½ teaspoon salt and ¼ teaspoon pepper.Step 2Preheat a grill pan to medium-high and spray. Grill patties until crust develops, about 2 minutes. Flip and cook 2 minutes more for medium. Remove burgers to a plate. Clean grill or grill pan and let cool slightly. Step 3Spread buns with French’s Classic Yellow Mustard and layer a slice of cheese, ham, pickles, a burger, red onion, and another slice of cheese on top. Close the sandwich.Step 4Preheat a grill pan to medium heat. Press the sandwiches, using a cast-iron skillet (or other heavy-bottomed, oven-safe skillet) to press the sandwiches, flipping one time, until the outside is golden and the cheese is melted, about 4 minutes. Serve warm with more mustard.
