Ingredients

1/3 cup chopped onion3 tablespoons butter1-1/2 cups chicken broth1 cup chopped dried apricots1/4 teaspoon curry powder1 cup uncooked couscous

Preparation

In a small saucepan, saute onion in butter. Stir in the broth, apricots and curry powder. Bring to a boil. Stir in couscous.

Cover and remove from the heat; let stand for 5-10 minutes or until liquid is absorbed. Fluff with a fork.
