Ingredients

1 cup chopped celery1 cup chopped onion1 teaspoon olive oil1 teaspoon minced garlic1/2 teaspoon curry powder1-1/2 cups cooked barley1/4 cup slivered almonds, toasted1/4 cup raisins1/4 cup minced fresh parsley1/4 teaspoon salt1/4 teaspoon pepper

Preparation

In a large skillet, saute celery and onion in oil for 8-10 minutes or until crisp-tender. Add the garlic and curry; saute for 1 minute. Warm barley in the microwave; stir into skillet. Add the remaining ingredients; cook and stir until heated through.
