Ingredients
1 large onion, finely chopped2 tablespoons butter4 large fresh green tomatoes, cubed1/4 cup all-purpose flour1 to 2 teaspoons curry powder1/2 teaspoon salt1/4 teaspoon pepper1/4 teaspoon sugarPinch ground cardamom, optional2 cups chicken broth2 cups cubed cooked porkHot cooked rice
Preparation
In a medium skillet, saute onion in butter. Add tomatoes; cover and simmer for 10-12 minutes or until tender. Combine flour, curry, salt, pepper, sugar and, if desired, cardamom; slowly stir into tomatoes. Add broth and pork; simmer, uncovered, until sauce thickens, 3-5 minutes. Serve over rice.
