Ingredients

1 medium tomato, chopped2 tablespoons chopped onion2 tablespoons minced fresh mint2 teaspoons chopped seeded jalapeno pepper1 tablespoon key lime juice1 teaspoon minced fresh rosemary2 bone-in pork loin chops (3/4 inch thick and 8 ounces each)1/8 teaspoon salt1/8 teaspoon pepper

Preparation

In a small bowl, combine the first six ingredients. Chill until serving.

Sprinkle pork chops with salt and pepper. Grill chops, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. Serve with salsa.
